Baked Egg Cups Recipe


I tried this Baked Egg Cups recipe awhile back and the kids really enjoyed it.  It was EASY and cheap to make too!  I even “messed it up” a little bit by not really following the directions to a T and it STILL turned out yummy!  

What You Need:

Deli ham
Eggs
Shredded cheddar cheese
Cooking spray
Salt
Pepper
Chive
Muffin tin

What You Do:

Spray the muffin cups with cooking spray.  Line the muffin cups with deli ham. 


Bake for 10 min @ 350.  In a bowl scramble the eggs.  After baking, pour a bit of the eggs in each muffin tin filling 2/3 of the way full.  Sprinkle with cheese, chives, salt & pepper.  


Return to the oven for 10 more minutes.  You may need to add to baking time depending on your oven and how done you like your eggs.


Please note:  I forgot to bake the ham first.  I didn't scramble the eggs in a bowl just in the ham cup...


AND in the original recipe it also says to put the cheese and chive on AFTER you bake the eggs.  I skipped this part and mine still turned out just fine. 

These are good with sour cream, hot sauce, salsa, etc.  You could also serve these as the savory side to pancakes, waffles or french toast!
