Pumpkin Muffins w/ Kelly from Exceptionalistic

Okay, not really because of the name thing but it is pretty cool, isn't it! I wanted to share one of the most popular posts which is just in time for Halloween and Thanksgiving. 5 Ingredient Pumpkin Muffins I found this on allrecipes.com and it is truly amazing. Here's what you need: 1 box yellow cake mix, 15 ounce can of pumpkin puree, 1 tsp ground cinnamon, 1/2 tsp ground nutmeg and 1/4 tsp ground cloves. Mix together!! My boys licked the beaters and loved the mix just as much as the muffins! We did not have the ground cloves and they were still delicious so technically I guess these were 4 ingredient pumpkin muffins!
Spoon into cupcake liners. Confession time: we also didn't have yellow cake mix but we did have funfetti cake mix, hence the colored specks you see. Still yummy!!
Batter makes about 24 muffins (depending on how much you fill). Bake for 20-25 minutes 
at 350 degrees. 

Finished product! I will fill them up a little more next time. I was unsure how fluffy they might get.

  1. This is a fall favorite around our home! Here's a hint: Use a spice cake mix and you don't even have to add the cinnamon, cloves, and nutmeg! Soooo yummy!
